Owner and head baker Marie Dubois, who trained in Paris before returning to her Michigan roots, has built a menu that blends traditional French techniques with seasonal, locally sourced ingredients. Her goal: to honor French baking traditions while staying connected to the surrounding community.

LeRouge’s menu is headlined by its signature croissants, which undergo a meticulous three-day preparation process. The result? A perfect balance of crisp, golden exterior and delicate, buttery layers inside. Dubois has also curated a beverage program that features expertly pulled espresso made with beans from a local Detroit-based roaster.

“We wanted to create something that honors French tradition while feeling connected to our community here,” explains Dubois.

More Than Just a Bakery

In just a few short weeks, LeRouge Boulangerie has become a community cornerstone, not just a breakfast stop. Its thoughtfully designed interior—with handcrafted wooden tables and floor-to-ceiling windows—offers a cozy, sunlit setting that invites patrons to linger, chat, and relax.

Local resident Michael Thompson shared, “It’s quickly become part of my routine. I’ve met more neighbors here in the past month than I had in the previous year.”

The bakery now offers lunch options as well, including quiches, fresh salads, and sandwiches made with their house-baked breads. The outdoor seating area has become a hub for local professionals during lunch hours, and weekend mornings see families forming new traditions over cups of French press coffee and pain au chocolat.

“Our workshops attract everyone from teenagers to retirees,” says Dubois. “There’s something magical about seeing people from different generations working dough side by side.”
